This is a very quick and easy recipe and was a national newspaper 'Weekend bake'.
225g/8oz porridge oats
170g/6oz soft brown sugar
Half tsp bicarbonate of soda
85g/3oz plain flour
170g/6oz melted butter
425g/15oz jar mincemeat
Mix the oats, flour, sugar and bicarbonate of soda together and add the melted butter.
Press half this mixture into the base of a tin 12 x 7 x 1inch.
Spread the mincemeat carefully over this and then scatter the remaining oat mixture on top to cover the mincemeat.
Bake in a pre-heated oven 180 degrees C, or gas mark 4 for 25-30 minutes (less in a fan oven) or until golden brown. Cool before slicing.
